70% Neutral Oak, 30% Stainless
The Cabernet Sauvignon grapes for this Estate Cabernet Rosato were hand -picked from our Lake Cynthia Vineyard on October 1, 2010. The grapes were picked, immediately delivered to the winery, hand sorted and crushed on the same day. The juice was on the skins for almost 48 hours. The wine was then fermented and will be aged, sur lie (which means in contact with the yeast or lees) in French oak barrels (mostly neutral) for 6 months prior to bottling. The 2010 season followed a rainy winter that filled the reservoirs and our Lake Cynthia. Substantial early spring rains delayed the need to irrigate the grapes by almost a month. The summer, up to the middle of August was the coolest summer on record for the past 80 years. A number of significant heat spikes in late August provided a real challenge to growers and made our job of sorting grapes in the winery particularly difficult. However, we took the time to sort the grapes carefully and the long, generally cool growing season gave us excellent ripening of the grapes and good acidity. It should be a very good year.
