The Cabernet Sauvignon grapes for this Cabernet Rosato were hand -picked from our Lake Cynthia Vineyard on October 13, 2009. The grapes were picked, delivered to the winery, hand sorted and crushed on the same day. The juice was on the skins for about 36 hours. The wine was then fermented and aged, sur lie (which means in contact with the yeast or lees) in neutral French oak barrels for 6 months prior to bottling. The 2009 season started again with a very dry winter and with little moisture in the soil. The growing season was marked by warm sunny days and cool nights with virtually no rain from March 15 until after harvest. The harvest date was somewhat typical and a bit ahead of the harvest of Cabernet Sauvignon for our Adgio in order to have a fruiter wine with more acidity.
