Scherzo (skert-sō) is a musical term meaning "a lively composition with many surprises." Surprise indeed! “Much More than a Rose”™, Scherzo is a fully fermented, ultra dry red wine, with no residual sugar and no sweetness. After crushing the Cabernet Sauvignon grapes that make up the wine, the juice is “cold soaked” on the skins for 24-48 hours to obtain the desired color and flavor. The juice is then drained off the skins “free run.” We do not press the grapes or the skins. The wine is fermented at cool temperatures in French Oak barrels to preserve the classic Cabernet Sauvignon fruity aromas, then aged sur lies for four to six months prior to bottling. It is that process that permits us to obtain the wine’s luminous color of pomegranate seeds and achieve an extraordinary Napa Valley Cabernet Rosato. Our goal is to define a new standard for American rose’ style wines - Rosato - serious wines that are light and dry and that beautifully express their individual Terroir. These wines will easily age for 5 or more years.
