SCHERZO: a
musical term
meaning "a lively composition with many surprises". Surprise
indeed!
Scherzo
is a fully fermented, ultra dry Rose’ wine, with no residual sugar!
The Cabernet
Sauvignon grapes for this wine were hand picked from our Lake Cynthia
Vineyard
east of the Silverado Trail, just north of the Town of Napa, on October
24,
2006.
They were hand sorted and crushed the same
day. Prior to fermentation the juice was "cold-soaked" in contact
with the skins for only 24 hours to obtain the wine's luminous color of
pomegranate seeds. All of the juice for this wine was saginee
or free run.
Fermented
at cool temperatures in French oak barrels, it was aged sur lies
for five months
prior
to bottling. It is rare to find such
fruit, spice and depth of color in a Rose'.
With cherry and white strawberry
flavors dominating, the soft, supple tannins and crisp, balanced
acidity provide
an impressive structure. This is a wonderful year-round Rose’ for
sipping or
for serving with lighter foods.
