Reserve Cabernet Sauvignon from Beckstoffer's TOKALON Vineyard

maker Kian Tavakoli,
Kitchak Cellar's Napa Valley Reserve
is our most passionate and rewarding effort. It brilliantly exploits
the Cabernet Sauvignon grapes from
Beckstoffer's TOKALON
Vineyard, America's most notable Cabernet vineyard and the source of
many of
Napa's impossible-to-find "Cult Cabs". After
a superb growing season characterized by
warm sunny days and cool nights, the grapes were hand picked into small
bins on
October 29, 2005. The grapes were immediately hand sorted, then
crushed, cold
soaked
and fermented with a period of extended maceration. The wine was aged
for thirty
months in 100% new French oak barrels and then bottle aged for an
additional
year. This robust, well balanced Cabernet with intense ripe blackberry
notes, will drink well now or age gracefully for twenty or more years.
This
extraordinary,
very limited production Cabernet is unfined and unfiltered; expect
reasonable
sediment.
